[FIX] sale: Correct the tax inclusion definition in the sales config
The commit1b31635introduces a switch between the definions of tax included and excluded. As the default value wasn't coherent with the intended behavior, the commit2e467a7tries to fix this. This commit is correct. Switch back the selection labels and set back the default value.
