Thibault Delavallée b8197ff178 [REF] various: update tracking parameters ...

Purpose is to clean the use of tracking parameters on fields. Parameters are
merged and is now tracking=<int> or tracking=True.

This commit is linked to task ID 1903814 and PR #28430.
