Victor Feyens 17bece3e79 [REF] sale,*: remove locked (done) SO state ...

It's not a specific state, it should be considered separately,
as a boolean.

This allows to reduce code complexity (flows should not rely (much) on
the locked logic) and to have a clearer flow.
